Summary

Add PostHog client-side and server-side analytics modules with typed event definitions
Instrument 14 events across self-serve signup, trial banner, trial expiration, and cron lifecycle flows
Client events: signup_page_viewed, signup_started, signup_completed, trial_banner_shown/dismissed/upgrade_clicked, trial_expired_interstitial_shown/contact_clicked
Server events: self_serve_org_created, self_serve_callback_completed/failed, trial_expiry_warning_sent, trial_expired_notification_sent, trial_org_archived

PR #13 in the self-serve stack. Depends on #12 (self-serve/09-tests-fixtures).

Test plan

Verify PostHog events fire correctly in browser dev tools (Network tab)
Verify server-side events appear in PostHog dashboard
Confirm no analytics code runs when NEXT_PUBLIC_POSTHOG_KEY is unset
